Hungarian Mushroom Soup

Ingredients

  • 4 tbsp butter
  • 1 large onion, chopped
  • 500 g mushrooms, sliced
  • 2 tsp Hungarian paprika
  • 1 tsp dried dill
  • 1 tbsp soy sauce
  • 2 cups vegetable or chicken broth
  • 1 cup milk
  • 3 tbsp flour
  • 1/2 cup sour cream
  • 2 tsp lemon juice
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and cook until soft.
  3. Stir in mushrooms and cook for about 10 minutes until tender.
  4. Add paprika, dill, and soy sauce. Mix well.
  5. Pour in the broth and let simmer for 15 minutes.
  6. In a bowl, whisk milk and flour until smooth, then slowly stir into the soup.
  7. Simmer for another 5 minutes until slightly thickened.
  8. Remove from heat and stir in sour cream and lemon juice.
  9. Season with salt and black pepper.
