- 3 cups bread cubes (day-old is perfect)
- 3 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley or oregano
- Salt & pepper
🍲 Instructions
1. Make the Croutons (10 minutes)
- Preheat oven to 200°C / 400°F.
- Toss bread cubes with oil + seasonings.
- Spread on a tray and bake 7–10 min until golden and crispy.
(Shake halfway.)
2. Start the Soup
- Heat oil in a large pot.
- Sauté onion, carrots, and celery for 5–6 min until soft.
- Add garlic, cook 1 minute.
3. Add Remaining Veggies & Broth
- Add potatoes, zucchini, green beans, tomatoes, broth, and seasonings.
- Bring to a boil, then simmer 20–25 min, until veggies are tender.
4. Boost It (optional)
Add beans, pasta, or greens and simmer another 8–10 min.
Taste and adjust salt and pepper.
🥣 Serve
Ladle soup into bowls and top generously with warm croutons.
Add grated Parmesan if you like!
