
Instructions:
- Make the batter:
- In a bowl, whisk together flour, eggs, milk, water, sugar (if using), and salt until smooth.
- Stir in melted butter/oil. The batter should be thin, like crepe batter. Let it rest for 20–30 minutes.
- Cook the pancakes:
- Heat a lightly oiled nonstick pan over medium heat.
- Pour a small ladle of batter, tilt the pan to spread thinly.
- Cook until the bottom is golden (about 1–2 min), flip, and cook the other side for 30–60 seconds.
- Repeat with the rest of the batter.
- Fill & roll (traditional style):
- Sweet fillings: apricot jam, Nutella, ground walnuts with sugar, sweet cottage cheese, or cinnamon sugar.
- Savory fillings: sautéed mushrooms, ham & cheese, or spinach.
- Spread filling, roll up or fold, and serve warm.
