Homemade Fruit Preserves (Lekvárok)

Ingredients:

  • 6 kg fresh fruit (e.g., plums, apricots, or berries)
  • 2-3 kg granulated sugar (adjust based on the fruit’s sweetness)
  • Optional: Lemon juice (to enhance flavor and preserve color)

Equipment:

  • Large pot
  • Blender or immersion mixer
  • Fine mesh sieve or food mill
  • Spatula
  • Sterilized glass jars with lids
  • Clean towels and a large pot for water bath canning (optional)

Instructions:

  1. Prepare the Fruit:
    • Pick or buy fresh, ripe fruit and wash thoroughly.
    • Remove pits, stems, and any damaged parts.
    • Chop the fruit into small pieces for easier cooking.
  2. Cook the Fruit:
    • Place the prepared fruit into a large pot.
    • Add a small amount of water (about ½ cup) to prevent sticking.
    • Cook on medium heat, stirring occasionally, until the fruit softens and releases its juices (about 30 minutes).
  3. Blend and Strain:
    • Use a blender or immersion mixer to puree the cooked fruit.
    • Pass the puree through a fine mesh sieve or food mill to remove skins and seeds. Use a spatula to press the pulp through.
  4. Cook with Sugar:
