Hungarian Tripe Soup Recipe

Ingredients (4–6 servings)

  • 700 g (1.5 lb) beef tripe (cleaned and sliced)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons oil or lard
  • 2 tablespoons sweet Hungarian paprika
  • 1 teaspoon hot paprika (optional)
  • 1 tomato, chopped
  • 1 green pepper, chopped
  • 1 carrot, sliced (optional)
  • 1 teaspoon caraway seeds
  • Salt and black pepper
  • 1.5 liters (6 cups) water or beef broth

Instructions

1️⃣ Wash tripe well and cut into thin strips.

2️⃣ Heat oil in a pot and sauté onion until soft.

3️⃣ Remove from heat and add paprika.

4️⃣ Add tripe, garlic, tomato, pepper, and caraway seeds.

5️⃣ Pour in water or broth.

6️⃣ Simmer gently for 1.5–2 hours until tripe becomes tender.

7️⃣ Season with salt and pepper.
