
Instructions
- Prepare the chicken:
- Season chicken breasts with salt, pepper, oregano, paprika, and garlic powder.
- Heat 2 tbsp olive oil or butter in a large skillet over medium heat.
- Cook chicken 5–7 minutes per side (depending on thickness) until golden brown and fully cooked. Remove from pan and set aside.
- Make the creamy mushroom sauce:
- In the same skillet, add 2 tbsp olive oil or butter.
- Sauté onion for 2–3 minutes until soft. Add garlic and cook 1 more minute.
- Add mushrooms and cook until browned, 4–5 minutes.
- Stir in sun-dried tomatoes. Pour in white wine (or chicken broth) and simmer 2–3 minutes.
- Add cream and cheese:
- Lower the heat and stir in heavy cream and Parmesan.
- Season with salt, pepper, and dried basil or Italian seasoning.
- Add spinach or kale if using, and cook until just wilted.
- Combine chicken and sauce:
- Return cooked chicken to the skillet. Spoon sauce over the top and simmer 2–3 minutes to heat through.
- Serve:
- Sprinkle with fresh parsley or basil.
- Serve alongside pasta, rice, mashed potatoes, or with crusty bread for dipping.
