🍗 Mediterranean Chicken Breast in Creamy Mushroom Sauce

Instructions

  1. Prepare the chicken:
    • Season chicken breasts with salt, pepper, oregano, paprika, and garlic powder.
    • Heat 2 tbsp olive oil or butter in a large skillet over medium heat.
    • Cook chicken 5–7 minutes per side (depending on thickness) until golden brown and fully cooked. Remove from pan and set aside.
  2. Make the creamy mushroom sauce:
    • In the same skillet, add 2 tbsp olive oil or butter.
    • Sauté onion for 2–3 minutes until soft. Add garlic and cook 1 more minute.
    • Add mushrooms and cook until browned, 4–5 minutes.
    • Stir in sun-dried tomatoes. Pour in white wine (or chicken broth) and simmer 2–3 minutes.
  3. Add cream and cheese:
    • Lower the heat and stir in heavy cream and Parmesan.
    • Season with salt, pepper, and dried basil or Italian seasoning.
    • Add spinach or kale if using, and cook until just wilted.
  4. Combine chicken and sauce:
    • Return cooked chicken to the skillet. Spoon sauce over the top and simmer 2–3 minutes to heat through.
  5. Serve:
    • Sprinkle with fresh parsley or basil.
    • Serve alongside pasta, rice, mashed potatoes, or with crusty bread for dipping.
