Pörkölt (Hungarian Stew)

Ingredients:

  • 800 g beef, pork, or chicken, cut into bite-sized pieces
  • 2 tbsp vegetable oil or lard
  • 2 large onions, finely chopped
  • 2 tbsp Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 green bell pepper, chopped
  • 200 ml water or broth
  • 1 tsp caraway seeds (optional)
  • Salt and black pepper to taste

Instructions:

  1. Heat the oil or lard in a large pot over medium heat.
  2. Add the onions and cook until golden and soft.
  3. Remove the pot from the heat and stir in the paprika.
  4. Add the meat and mix well to coat.
  5. Return to the heat and cook until the meat begins to brown.
  6. Add garlic, tomato, bell pepper, and caraway seeds.
  7. Pour in the water or broth.
  8. Cover and simmer on low heat for 1–2 hours, stirring occasionally, until the meat is tender.
  9. Season with salt and black pepper to taste.
  10. Cook uncovered for a few minutes if a thicker sauce is desired.
