Ingredients

  • 8 medium fresh beets
  • 1 cup vinegar (white or apple cider)
  • ½ cup sugar
  • 1 cup water
  • 1 ½ teaspoons whole cloves
  • 1 ½ teaspoons whole allspice
  • ½ teaspoon salt

Instructions

1. Cook the Beets

  • Wash and trim the beets, leaving a bit of the stem intact.
  • Place in a pot, cover with water, and boil for 30–40 minutes until tender.
  • Drain, cool, then peel and slice.

2. Prepare the Pickling Liquid

  • In a saucepan, combine vinegar, water, sugar, salt, cloves, and allspice.
  • Bring to a boil, then reduce heat and simmer for 5 minutes.

3. Pickle the Beets

  • Place sliced beets into clean jars or a container.
  • Pour the hot pickling liquid over the beets until fully covered.

4. Chill & Serve

  • Let cool, then refrigerate for at least 4–6 hours (overnight for best flavor).
  • Serve chilled and enjoy!
