My Grandmother’s Hungarian Chicken Paprikash Recipe

Ingredients:

  • 1 kg chicken thighs or drumsticks
  • 2 tbsp oil or lard
  • 2 large onions, finely chopped
  • 2 tbsp Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 green bell pepper, chopped
  • 200 ml sour cream
  • 1 tbsp flour (optional)
  • 250 ml chicken broth or water
  • Salt and black pepper to taste

Instructions:

  1. Heat oil or lard in a large pot over medium heat.
  2. Add onions and cook until soft and golden.
  3. Remove from heat and stir in paprika quickly (to avoid burning).
  4. Add chicken pieces and coat well in the paprika-onion mixture.
  5. Return to heat and add garlic, tomato, and bell pepper.
  6. Pour in broth or water, cover, and simmer for 40–50 minutes until the chicken is tender.
  7. In a small bowl, mix sour cream with flour (if using).
  8. Stir the sour cream mixture into the pot and cook for 5–10 more minutes until the sauce thickens.
  9. Season with salt and black pepper to taste.
