🇭🇺 Karfiolleves (Hungarian Cauliflower Soup with Dumplings)

🧾 Ingredients:

  • 1 medium cauliflower (cut into florets)
  • 1 large carrot (sliced)
  • 1 small onion (finely chopped)
  • 2 tbsp oil or butter
  • 1 tbsp Hungarian sweet paprika
  • 1 tbsp flour
  • 1 liter vegetable or chicken broth
  • Salt and black pepper (to taste)
  • 1 tsp dried parsley or fresh parsley

For dumplings (galuska):

  • 1 egg
  • 3–4 tbsp flour
  • 1 pinch salt

👩‍🍳 Instructions:

  1. Sauté base:
    Heat oil or butter in a pot and cook onion until soft.
  2. Remove from heat and stir in paprika.

  1. Make the soup:
    Add cauliflower and carrots.
  2. Sprinkle flour and mix well.
  3. Pour in broth gradually while stirring.
  4. Season with salt and pepper.

  1. Simmer:
    Cook for 15–20 minutes until vegetables are tender.

  1. Prepare dumplings:
    Mix egg, flour, and salt into a soft batter.
  2. Drop small spoonfuls into the simmering soup.
  3. Cook until dumplings float (2–3 minutes).

Finish with parsley.
