Instructions:
Wash the tripe thoroughly and cut it into bite-sized strips if needed.

Heat the oil or lard in a large pot and sauté the onions until soft and golden. Add the garlic, then remove the pot briefly from the heat and stir in the paprika.

Add the tripe and mix well to coat it with the onion and paprika mixture. Stir in the tomato, green pepper, salt, pepper, caraway seeds, and bay leaf.

Pour in enough water or broth to cover the meat. Cover and simmer slowly for about 2–3 hours, or until the tripe becomes tender and the stew develops a rich flavor. Stir occasionally and add more liquid if necessary
