Hungarian Paprika Potatoes (Paprikás Krumpli) 🇭🇺

🥔 Ingredients:

  • 6 medium potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tbsp oil or lard
  • 1 tbsp Hungarian sweet paprika
  • 1 tsp smoked paprika (optional)
  • 1 tomato, chopped (or 2 tbsp canned)
  • 1 green pepper, chopped
  • 1–2 cloves garlic, minced
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp caraway seeds (optional)
  • 1 sausage (Hungarian kolbász or smoked sausage), sliced (optional)
  • 2–3 cups water or broth

🍲 Instructions:

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft and slightly golden.
  3. Remove from heat, stir in paprika (to avoid burning).
  4. Add garlic, tomato, and green pepper. Stir well.
  5. Add potatoes and sausage (if using). Mix to coat everything in paprika.
  6. Pour in enough water or broth to just cover the potatoes.
  7. Season with salt, pepper, and caraway seeds.
  8. Bring to a boil, then reduce heat and simmer for 25–30 minutes until potatoes are tender.
  9. Stir occasionally and adjust seasoning if needed.

🍽️ Tips:

  • Serve hot with fresh bread or pickles.
  • It should be slightly soupy, not dry.
  • Add a pinch of hot paprika if you like a spicy kick.
