Hungarian Pancakes (Palacsinta)

Ingredients:

  • 250 g all-purpose flour
  • 2 eggs
  • 500 ml milk
  • 100 ml sparkling water
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • Pinch of salt

Instructions:

  1. In a large bowl, whisk together the eggs, milk, sparkling water, sugar, oil, and salt.
  2. Gradually add the flour, whisking until the batter is smooth and lump-free.
  3. Let the batter rest for 15–20 minutes.
  4. Heat a lightly greased non-stick skillet over medium heat.
  5. Pour a small amount of batter into the pan and swirl to create a thin layer.
  6. Cook for 1–2 minutes, then flip and cook for another 30–60 seconds.
  7. Repeat with the remaining batter.
