Hungarian Mushroom Soup

📝 Ingredients

  • 500 g mushrooms (sliced)
  • 2 tbsp butter
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tsp Hungarian sweet paprika
  • 1 tbsp flour
  • 750 ml vegetable or chicken broth
  • 100 ml milk
  • 150 ml sour cream
  • 1 tbsp soy sauce
  • 1 tsp dried dill (or fresh if available)
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

👩‍🍳 Instructions

1. Cook the Base

  1. Melt butter in a pot over medium heat.
  2. Add onion and cook until soft.
  3. Stir in garlic and cook briefly.
  4. Add mushrooms and sauté until they release their juices and soften.

2. Add Flavor

  1. Stir in paprika and flour, mix well.
  2. Pour in broth and milk, stirring to avoid lumps.
  3. Add soy sauce and dill.

3. Simmer

  • Let soup simmer for 15–20 minutes, until slightly thickened.

4. Finish the Soup

  1. In a bowl, mix sour cream with a little hot soup (to temper).
  2. Stir back into the pot.
  3. Add lemon juice.
  4. Season with salt and pepper.

5. Serve

  • Garnish with fresh parsley and serve warm.
