Ingredients

  • 400 g (14 oz) wide egg noodles or pasta
  • 300 g (10 oz) cottage cheese (or farmer’s cheese / ricotta, drained)
  • 150 g (5 oz) bacon, diced
  • 2 tbsp butter
  • Salt, to taste
  • Freshly ground black pepper

  • ½ cup sour cream (traditional in many homes)

Instructions

  1. Cook pasta
    • Boil pasta in well-salted water until tender. Drain.
  2. Crisp bacon
    • Cook diced bacon in a pan until golden and crispy.
    • Remove bacon; keep the rendered fat in the pan.
  3. Combine
    • Add butter to the bacon fat.
    • Toss in hot pasta, coating well.
    • Gently fold in cottage cheese.
  4. Finish
    • Season with salt and pepper.
    • Sprinkle crispy bacon on top.
    • Add sour cream if using.
