Hungarian Beef Pörkölt


Step 1: Brown the Beef

Heat the lard or oil in a large Dutch oven over medium-high heat.

Brown the beef in batches until well seared on all sides.

Transfer to a plate.


Step 2: Cook the Onions

Reduce the heat to medium.

Add the chopped onions.

Cook slowly for 12–15 minutes, stirring frequently, until deeply softened and lightly golden.

Add the garlic and cook for 1 minute.


Step 3: Add the Paprika

Remove the pot from the heat briefly.

Stir in:

  • Sweet Hungarian paprika
  • Hot paprika (if using)

Mix well to coat the onions.

This prevents the paprika from burning and turning bitter.


Step 4: Build the Stew

Return the beef to the pot.

Add:

  • Green pepper
  • Tomato
  • Caraway seeds
  • Bay leaves
  • Salt
  • Black pepper

Pour in the beef broth.

Stir well.

Bring to a gentle simmer.


Step 5: Slow Cook

Cover and simmer over low heat for 2–2½ hours, stirring occasionally.

The beef should become fork-tender and the sauce should reduce into a rich, thick gravy.

If needed, add a little extra broth during cooking.

Remove the bay leaves before serving.


Step 6: Serve

Garnish with fresh parsley and a dollop of sour cream if desired.

Serve hot.
