1️⃣ Prepare the rice

Cold rice separates better and gives the classic fried rice texture.
Tip: If your rice is fresh, spread it on a plate and chill 20 minutes.

2️⃣ Cook the eggs

  1. Heat 1 tbsp oil in a large pan or wok.
  2. Add beaten eggs and scramble until cooked.
