1️⃣ Prepare the rice
Cold rice separates better and gives the classic fried rice texture.
Tip: If your rice is fresh, spread it on a plate and chill 20 minutes.
2️⃣ Cook the eggs
- Heat 1 tbsp oil in a large pan or wok.
- Add beaten eggs and scramble until cooked.
- Remove and set aside.
3️⃣ Sauté aromatics
- Add remaining oil.
- Sauté onion for 2–3 minutes.
- Add garlic and cook 30 seconds.
4️⃣ Add veggies

- Mix the scrambled eggs back into the rice.

- Garnish with green onions or chilies.
