Esterházy Cake (Esterházy torte)

🧾 Ingredients

Nut layers:

  • 6 egg whites
  • 150 g sugar
  • 150 g ground walnuts or almonds
  • 1 tbsp flour

Cream:

  • 6 egg yolks
  • 200 g sugar
  • 250 ml milk
  • 200 g butter
  • 1 tbsp vanilla
  • 1 tbsp cornstarch (or flour)

Topping:

  • White chocolate or fondant
  • Dark chocolate (for decoration)

👩‍🍳 Instructions

  1. Whip egg whites + sugar until stiff.
  2. Fold in nuts and flour.
  3. Bake thin layers at 180°C for 8–10 minutes each.
  4. Cook milk, sugar, yolks, vanilla, and cornstarch until thick. Cool.
  5. Beat butter and mix with cooled cream.
  6. Layer cake with cream between sheets.
  7. Cover top with white chocolate.
  8. Draw chocolate lines and make the classic pattern.
  9. Chill 4–6 hours before serving.
