Bableves (Hungarian Bean Soup)

Instructions:

  1. Soak beans overnight, then drain.
  2. In a pot, sauté onion in oil or lard until soft.
  3. Add garlic and paprika, stir quickly.
  4. Add bacon (if using), beans, carrots, parsley root, and bay leaf.
  5. Pour in water or broth and simmer for 60–90 minutes.
  6. Add potatoes and cook until everything is tender.
  7. Season with salt and pepper.
  8. Finish with a little vinegar for a traditional tangy taste.
  9. Serve hot, optionally with bread.
