1. Make the cheesecake filling
In a bowl, beat together:
- Cream cheese
- Sugar
- Vanilla
- Heavy cream/sour cream
Mix until smooth and creamy.
2. Fill the egg rolls
- Lay an egg roll wrapper like a diamond.
- Add 1–2 tbsp cheesecake filling in the center.
- Add 1 tbsp cherry pie filling on top.
- Fold the bottom point up, fold in the sides, then roll tightly.
- Brush the tip with egg wash to seal.
3. Air fry
- Preheat the air fryer to 190°C (375°F).
- Spray the basket lightly with oil.
- Place the egg rolls in a single layer (don’t overcrowd).
- Spray the tops of the egg rolls.
- Cook 8–10 minutes, flipping halfway, until golden and crispy.
4. Serve
Let cool 2–3 minutes, then dust with:
- Powdered sugar or
- Cinnamon sugar
