Hungarian Plum Cake (Szilvás Pite)

Ingredients:

Dough:

  • 400 g all-purpose flour
  • 200 g butter (cold, cubed)
  • 100 g sugar
  • 1 egg
  • 1 tsp baking powder
  • Pinch of salt
  • 2–3 tbsp sour cream or milk

Plum filling:

  • 600–800 g plums, halved and pitted
  • 2–3 tbsp sugar (to taste)
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1–2 tbsp breadcrumbs or semolina (to absorb juice)

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix flour, baking powder, sugar, salt, and butter until crumbly.
  3. Add egg and sour cream (or milk) and knead into a soft dough.
  4. Divide dough into two parts and chill for 20–30 minutes.
  5. Mix plums with sugar, cinnamon, and lemon juice.
  6. Roll out the first dough layer and place in a baking tray.
  7. Sprinkle breadcrumbs or semolina over the base.
  8. Arrange plum halves over the dough.
  9. Cover with the second dough layer or crumble it on top.
  10. Bake for 35–45 minutes until golden and bubbling.
  11. Let cool before slicing.
