
Ingredients:
Dough:
- 500 g all-purpose flour
- 7 g dry yeast
- 250 ml warm milk
- 80 g sugar
- 100 g butter, softened
- 2 egg yolks
- 1 tsp vanilla extract
- Pinch of salt
Walnut Filling:
- 300 g ground walnuts
- 120 g sugar
- 120 ml milk
- 1 tsp vanilla extract
- Zest of 1 lemon
For Brushing:
- 1 egg, beaten
Instructions:
- Dissolve the yeast in the warm milk and let stand for 5–10 minutes.
- In a large bowl, combine flour, sugar, and salt.
- Add butter, egg yolks, vanilla, and the yeast mixture. Knead into a smooth dough.
- Cover and let rise for about 1 hour, until doubled in size.
- For the filling, heat milk and sugar in a saucepan. Stir in walnuts, vanilla, and lemon zest. Let cool.
- Roll the dough into a large rectangle.
- Spread the walnut filling evenly over the dough.
- Roll up tightly from the long side into a log.
- Place on a parchment-lined baking sheet and brush with beaten egg.
- Let rest for 20 minutes.
- Bake at 180°C (350°F) for 30–35 minutes, or until golden brown.
- Cool before slicing.
