Zserbó szelet (Hungarian Gerbeaud Cake)

A classic Hungarian pastry made with soft yeast dough, sweet apricot jam, walnuts, and a rich chocolate topping.


Ingredients

Dough

  • 500 g all-purpose flour
  • 250 g butter, softened
  • 50 g sugar
  • 1 packet dry yeast (7 g)
  • 1 egg
  • 1 egg yolk
  • 100 ml warm milk
  • Pinch of salt

Filling

  • 300 g apricot jam
  • 250 g ground walnuts
  • 150 g sugar

Chocolate Glaze

  • 150 g dark chocolate
  • 2 tbsp butter

Instructions

1. Prepare the Dough

  1. Dissolve yeast in warm milk with a little sugar.
  2. Mix flour, butter, sugar, salt, egg, and egg yolk.
  3. Add yeast mixture and knead into a smooth dough.
  4. Divide dough into 3 equal parts and let rest for 30 minutes.

2. Assemble the Layers

  1. Roll out the first dough portion and place into a greased baking pan.
  2. Spread with apricot jam and sprinkle with walnuts mixed with sugar.
  3. Repeat with the second layer.
  4. Add the final dough layer on top.

3. Bake

  1. Prick the top with a fork.
  2. Bake at 180°C (350°F) for 35–40 minutes until lightly golden.
  3. Let cool completely.

4. Add Chocolate Glaze

  1. Melt chocolate with butter until smooth.
  2. Spread over the cooled cake.
  3. Allow glaze to set before slicing into squares.
