Hungarian Gerbeaud Cake (Zserbó Szelet)

The famous Zserbó szelet (also known as Gerbeaud cake) is one of Hungary’s most iconic pastries — rich layers of buttery dough filled with walnut and apricot jam, finished with a glossy chocolate glaze.


Ingredients

Dough

  • 500 g all-purpose flour
  • 200 g unsalted butter (cold, cubed)
  • 100 g sugar
  • 2 egg yolks
  • 25 g fresh yeast (or 7 g dry yeast)
  • 120 ml warm milk
  • Pinch of salt
  • 1 tsp vanilla extract

Filling

  • 300 g finely ground walnuts
  • 150–200 g sugar
  • 250–300 g apricot jam (smooth, slightly tart)

Chocolate Glaze

  • 150 g dark chocolate
  • 2 tbsp butter
  • 2 tbsp milk
