
🇭🇺 Karfiolleves (Hungarian Cauliflower Soup with Dumplings)
🧾 Ingredients:
- 1 medium cauliflower (cut into florets)
- 1 large carrot (sliced)
- 1 small onion (finely chopped)
- 2 tbsp oil or butter
- 1 tbsp Hungarian sweet paprika
- 1 tbsp flour
- 1 liter vegetable or chicken broth
- Salt and black pepper (to taste)
- 1 tsp dried parsley or fresh parsley
For dumplings (galuska):
- 1 egg
- 3–4 tbsp flour
- 1 pinch salt

👩🍳 Instructions:
- Sauté base:
Heat oil or butter in a pot and cook onion until soft. - Remove from heat and stir in paprika.
- Make the soup:
Add cauliflower and carrots. - Sprinkle flour and mix well.
- Pour in broth gradually while stirring.
- Season with salt and pepper.
- Simmer:
Cook for 15–20 minutes until vegetables are tender.
- Prepare dumplings:
Mix egg, flour, and salt into a soft batter. - Drop small spoonfuls into the simmering soup.
- Cook until dumplings float (2–3 minutes).
Finish with parsley.
