Ingredients
- 8 medium fresh beets
- 1 cup vinegar (white or apple cider)
- ½ cup sugar
- 1 cup water
- 1 ½ teaspoons whole cloves
- 1 ½ teaspoons whole allspice
- ½ teaspoon salt

Instructions
1. Cook the Beets
- Wash and trim the beets, leaving a bit of the stem intact.
- Place in a pot, cover with water, and boil for 30–40 minutes until tender.
- Drain, cool, then peel and slice.
2. Prepare the Pickling Liquid
- In a saucepan, combine vinegar, water, sugar, salt, cloves, and allspice.
- Bring to a boil, then reduce heat and simmer for 5 minutes.
3. Pickle the Beets
- Place sliced beets into clean jars or a container.
- Pour the hot pickling liquid over the beets until fully covered.
4. Chill & Serve
- Let cool, then refrigerate for at least 4–6 hours (overnight for best flavor).
- Serve chilled and enjoy!
