Hungarian Creamy Pork Mushroom Paprikás (Sertés Gombapaprikás) 🇭🇺

Ingredients (4 servings)

  • 500 g (1 lb) pork (shoulder or tenderloin), cubed
  • 250 g (9 oz) mushrooms, sliced
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp oil or lard
  • 2 tbsp sweet Hungarian paprika
  • 1 tomato, chopped (or 1 tbsp tomato paste)
  • 1 green pepper, chopped
  • 200 ml (¾ cup) sour cream
  • 1 tbsp flour
  • ½–1 cup (120–240 ml) water or broth
  • Salt and black pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Heat oil in a pot and sauté the onion until soft.
  2. Add garlic and pork cubes, cook until lightly browned.
  3. Remove pot briefly from heat and stir in paprika.
  4. Add tomato and green pepper.
  5. Pour in a little water or broth, cover and simmer 25–30 minutes until pork is tender.
  6. Add mushrooms and cook another 10 minutes.
  7. Mix sour cream with flour, then stir into the stew.
  8. Simmer 5 minutes until sauce becomes creamy and thick.
  9. Season with salt and pepper.
