Ingredients

  • 2 tablespoons oil
  • 2 large onions, finely chopped
  • 2 tablespoons Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 medium potatoes, cubed
  • 1 red bell pepper, chopped
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 1 teaspoon caraway seeds (optional)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 4 cups (1 liter) vegetable broth
  • 1 tablespoon tomato paste
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pot. Sauté onions slowly until soft and lightly golden.
  2. Remove from heat and stir in paprika (to prevent burning).
  3. Add garlic, carrots, potatoes, bell pepper, tomato, caraway seeds, salt, and pepper.
  4. Stir in tomato paste.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer 25–30 minutes until vegetables are tender.
  7. Adjust seasoning and garnish with fresh parsley before serving.
