Hungarian Cabbage and Noodles (Káposztás Tészta)

Ingredients (Serves 4)

  • 12 oz (350 g) wide egg noodles
  • 1 medium head green cabbage, finely shredded
  • 1 medium onion, finely chopped (optional)
  • 3 tbsp vegetable oil or lard
  • 1–2 tsp sugar
  • Salt and black pepper to taste

Instructions

  1. Cook noodles:
    Boil egg noodles in salted water according to package directions. Drain and set aside.
  2. Prepare cabbage:
    Sprinkle shredded cabbage with 1 tsp salt and let sit 10–15 minutes. Squeeze out excess moisture.
  3. Caramelize cabbage:
    Heat oil (or lard) in a large skillet over medium heat. Add onion (if using) and cook until soft.
    Add cabbage and sugar. Cook 20–30 minutes, stirring occasionally, until cabbage is soft and lightly caramelized.
  4. Combine:
    Add cooked noodles to the skillet. Toss well and cook together for 3–5 minutes.
  5. Season & serve:
    Season generously with black pepper and additional salt if needed. Serve warm.
