
Ingredients (Serves 4)
- 12 oz (350 g) wide egg noodles
- 1 medium head green cabbage, finely shredded
- 1 medium onion, finely chopped (optional)
- 3 tbsp vegetable oil or lard
- 1–2 tsp sugar
- Salt and black pepper to taste
Instructions
- Cook noodles:
Boil egg noodles in salted water according to package directions. Drain and set aside. - Prepare cabbage:
Sprinkle shredded cabbage with 1 tsp salt and let sit 10–15 minutes. Squeeze out excess moisture. - Caramelize cabbage:
Heat oil (or lard) in a large skillet over medium heat. Add onion (if using) and cook until soft.
Add cabbage and sugar. Cook 20–30 minutes, stirring occasionally, until cabbage is soft and lightly caramelized. - Combine:
Add cooked noodles to the skillet. Toss well and cook together for 3–5 minutes. - Season & serve:
Season generously with black pepper and additional salt if needed. Serve warm.
💡 Tip: Some Hungarians enjoy this dish slightly sweet, others prefer it savory—adjust sugar and pepper to taste.
