Ingredients
- 12–15 mini croissants (or large croissants cut in half)
- 2 cups cooked chicken breast, finely chopped or shredded
- ½ cup mayonnaise
- ¼ cup cream cheese, softened
- ¼ cup dried cranberries (or raisins)
- ¼ cup celery, finely chopped
- 2 tbsp green onion or parsley, chopped
- Salt & black pepper, to taste
Optional Add-Ins
- Chopped walnuts or pecans
- Dijon mustard (1 tsp)
- Lemon juice (1 tsp)
Instructions
- In a bowl, mix chicken, mayonnaise, and cream cheese until creamy.
- Stir in cranberries, celery, and herbs.
- Season with salt and pepper (add mustard or lemon juice if using).
- Slice croissants and gently open.
- Fill generously with chicken salad.
- Chill 15–20 minutes before serving for best flavor.
