Ingredients

  • 8 small flour tortillas
  • 1 lb ground beef or chicken
  • 1 tbsp oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • ½ cup water
  • 1½ cups shredded cheddar or Mexican-blend cheese
  • ½ cup cooked rice or seasoned potatoes (optional)

Optional Add-Ins

  • Jalapeños
  • Corn
  • Black olives

Instructions

  1. Preheat oven to 375°F (190°C) or heat a skillet over medium heat.
  2. Heat oil in a pan. Cook onion and garlic until soft.
  3. Add ground meat and brown. Stir in taco seasoning and water; simmer 5 minutes.
  4. Lay tortillas flat. Add meat, rice (if using), and plenty of cheese.
  5. Fold tortillas into sealed pockets.
  6. Oven method: Place on baking sheet and bake 12–15 minutes until golden and melty.
    Skillet method: Cook pockets in a dry pan until crispy on both sides.
  7. Serve hot.
