- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or use silicone liners.
- Whisk eggs in a large bowl with milk (if using), salt, and pepper.
- Add fillings: Distribute chopped veggies, protein, and cheese evenly into each muffin cup (fill about halfway).
- Pour egg mixture on top of the fillings in each cup until nearly full.
- Bake for 20–25 minutes, or until eggs are set and tops are lightly golden.
- Cool slightly before removing. Serve warm or refrigerate for up to 5 days.
🔄 To Reheat:
- Microwave for 30–45 seconds
- Or reheat in oven at 350°F (175°C) for 5–8 minutes
