  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or use silicone liners.
  2. Whisk eggs in a large bowl with milk (if using), salt, and pepper.
  3. Add fillings: Distribute chopped veggies, protein, and cheese evenly into each muffin cup (fill about halfway).
  4. Pour egg mixture on top of the fillings in each cup until nearly full.
  5. Bake for 20–25 minutes, or until eggs are set and tops are lightly golden.
  6. Cool slightly before removing. Serve warm or refrigerate for up to 5 days.
