- Preheat oven to 350°F (180°C).
Grease and line an 8×8 inch (20×20 cm) baking pan or loaf pan. - In a large bowl, whisk together:
Eggs, brown sugar, granulated sugar, vanilla, oil, and milk — until smooth. - Add in flour, baking powder, cinnamon, and salt.
Mix just until combined — don’t overmix! - Fold in any optional add-ins if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick comes out clean.
- Let cool slightly before slicing — enjoy warm or room temp!

- Want it fluffier? Use room temp eggs and milk.
- Want it richer? Swap oil for melted butter.
- Store leftovers in an airtight container — stays soft for 3–4 days.
