
Ingredients
- 6–8 bell peppers
- 1 lb (500g) ground pork (or pork & beef mix)
- ½ cup uncooked rice
- 1 small onion, finely chopped
- 1 egg
- 1 teaspoon sweet paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
Tomato Sauce:
- 2 cups tomato sauce or crushed tomatoes
- 2 cups water
- 1 tablespoon sugar
- 1 tablespoon flour
- 1 tablespoon oil
Instructions
- Remove tops and seeds from peppers.
- In a bowl, mix ground meat, rice, onion, egg, paprika, salt, and pepper.
- Stuff peppers firmly with the meat mixture.
- Place stuffed peppers upright in a large pot.
- In a small pan, heat oil, stir in flour to make a light roux. Add tomato sauce, water, and sugar. Stir until smooth.
- Pour sauce over peppers. It should nearly cover them.
- Cover and simmer gently for 45–60 minutes until rice and meat are fully cooked.
- Serve hot with extra sauce and fresh bread or mashed potatoes.
