- 200 g all-purpose flour
- 2 eggs
- 300 ml milk
- 100 ml sparkling water (for extra lightness)
- 1 tbsp sugar (optional, for sweet version)
- Pinch of salt
- 1 tsp vanilla extract (optional)
- Butter or oil (for cooking)

1. Make the Batter
- In a bowl, whisk eggs, milk, sparkling water, sugar (if using), salt, and vanilla.
- Gradually add flour, whisking until smooth and lump-free.
- Let batter rest for 15β20 minutes.
π The batter should be thinβsimilar to heavy cream.
2. Cook the Crepes
- Heat a non-stick pan over medium heat and lightly grease it.
- Pour a small ladle of batter and swirl to coat the pan thinly.
- Cook for 1β2 minutes until edges lift slightly.
- Flip and cook another 30β60 seconds.
- Repeat with remaining batter.
