  1. In a pot, heat oil or butter and sauté the chopped onion until soft and slightly golden.
  2. Add the carrots, parsley root, and celery. Cook for a few minutes.
  3. Pour in the broth and season with salt and pepper. Let it simmer for about 15–20 minutes until vegetables are tender.
