Activate Yeast: Mix warm milk, 1 tbsp sugar, and yeast. Let sit 5–10 minutes until foamy.
Make Dough: In a large bowl combine flour, remaining sugar, and salt. Add egg yolks, melted butter, rum, and yeast mixture. Knead until smooth and elastic (8–10 minutes).
Rise: Cover and let rise 1–1½ hours until doubled in size.
Shape: Roll dough to ½ inch thick. Cut into 3-inch rounds. Cover and rest 30 minutes.
Fry: Heat oil to 350°F (175°C). Fry one side covered for 1–2 minutes. Flip and fry uncovered until golden brown. Drain on paper towels.
Serve: Dust with powdered sugar and serve with apricot jam.
