Fánk are light, fluffy yeast-raised donuts that have been a beloved part of Hungarian cuisine for generations. Traditionally enjoyed during Carnival season (Farsang), these golden treats are deep-fried until perfectly puffed and often filled with apricot jam or dusted generously with powdered sugar. For the Dough
- 500 g (4 cups) all-purpose flour
- 250 ml (1 cup) whole milk, warmed
- 7 g (2¼ tsp) active dry yeast
- 60 g (¼ cup) granulated sugar
- 4 egg yolks
- 60 g (¼ cup) unsalted butter, melted
- 1 tsp vanilla extract
- 1 tbsp rum (optional, helps reduce oil absorption)
- ½ tsp salt
- Grated zest of 1 lemon
