🇭🇺 Brown Butter Hungarian Poppy Seed Strudel (Mákos Rétes)

🧾 Ingredients:

For the dough (or use store-bought strudel/phyllo):

  • 300 g all-purpose flour
  • 1 egg
  • 120 ml warm water
  • 2 tbsp oil
  • 1 pinch salt

For the filling:

  • 250 g ground poppy seeds
  • 120 g sugar
  • 200 ml milk
  • 1 tsp vanilla extract
  • Zest of 1 lemon

For the brown butter:

  • 120 g butter

For finishing:

  • Powdered sugar

👩‍🍳 Instructions:

  1. Prepare dough (if homemade):
    Mix flour, salt, egg, water, and oil.
  2. Knead until smooth and elastic.
  3. Cover and let rest for at least 30–45 minutes.

  1. Make filling:
    Heat milk with sugar until dissolved.
  2. Mix with ground poppy seeds, vanilla, and lemon zest.
  3. Let cool.

  1. Brown the butter:
    Melt butter over medium heat until golden and nutty. Set aside.

  1. Stretch dough:
    Roll out dough, then gently stretch it thin (almost transparent) on a floured cloth.
  2. Brush with brown butter.

  1. Add filling & roll:
    Spread filling evenly.
  2. Roll tightly using the cloth to help shape.

  1. Bake:
    Place on a lined tray and brush with more brown butter.

🔥 Bake at 180°C (350°F) for 30–35 minutes until golden and crisp.
