Bejgli is a traditional Hungarian holiday pastry with sweet walnut or poppy seed filling rolled inside a soft buttery dough.

Dough

  • 500 g all-purpose flour
  • 200 g butter
  • 7 g dry yeast
  • 2 egg yolks
  • 100 ml milk
  • 80 g sugar
  • Pinch of salt

Walnut Filling

  • 200 g ground walnuts
  • 100 g sugar
  • 100 ml milk
  • Vanilla or lemon zest

Poppy Seed Filling

  • 200 g ground poppy seeds
  • 100 g sugar
  • 120 ml milk
  • Vanilla or orange zest
