- 2 tbsp olive oil or butter
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced

- 1 cup green beans, chopped
- 1 cup corn or peas (optional)
- 1 can diced tomatoes (400g)
- 6 cups vegetable broth (or water + bouillon)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt & black pepper to taste
Optional add-ins:
- 1 cup cooked beans (kidney, white, or chickpeas)
- 1/2 cup pasta or rice
- Handful of spinach or cabbage
🍲 Instructions
1. Sauté the vegetables
Heat oil in a big pot.
Add onion, carrot, and celery.
Cook 5–7 minutes until soft.
2. Add remaining vegetables
Add potatoes, zucchini, green beans, corn, peas, etc.
3. Add liquid and tomatoes
Pour in broth + canned tomatoes.
Add oregano, thyme, paprika, salt, pepper.
Stir well.
4. Simmer
Bring to a boil, then lower heat.
Simmer 25–30 minutes until veggies are tender.

Add beans, pasta, or spinach.
Cook 8–10 minutes more.
