- Marinate the Beef:
- In a bowl, combine beef chunks, soy sauce, and calamansi (or lemon) juice. Let it marinate for 30 minutes.
- Sear the Beef:
- Heat the cooking oil in a pot over medium heat. Sear the beef until browned on all sides. Remove and set aside.
- Sauté the Aromatics:
- In the same pot, sauté garlic and onion until fragrant and softened. Add the tomatoes and cook until mushy.
- Cook the Beef:
- Return the beef to the pot. Stir in the tomato sauce and beef broth (or water). Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add more water if needed.
- Add the Vegetables:
- Add the potatoes and carrots. Simmer for 15–20 minutes or until the vegetables are tender.
- Finish with Bell Pepper:
- Stir in the red bell pepper and cook for another 5 minutes. Season with salt and pepper to taste.
- Serve:
