Instructions
- Preheat the oven:
Preheat to 400°F (200°C) and lightly grease a muffin tin. - Prepare the potato mixture:
In a bowl, mix mashed potatoes, egg, Parmesan, melted butter, garlic powder, salt, and pepper until smooth and creamy. - Form the nests:
Scoop about 2 tablespoons of the potato mixture into each muffin cup.
Use a spoon to press the center down and form a small “nest” shape. - Bake the nests (first bake):
Bake for 15 minutes until lightly golden around the edges. - Add the filling:
Remove from oven. Fill each nest with shredded cheese and bacon bits (or your favorite filling like sautéed mushrooms, veggies, or chicken). - Bake again:
Return to the oven for 5–7 more minutes, until the cheese melts and bubbles. - Garnish and serve:
Let cool slightly, then gently remove from the muffin tin.
Sprinkle with green onions or parsley and serve warm!
🍽️ Serving Ideas
- Serve with sour cream, ranch, or garlic aioli.
- Great alongside grilled meat, roast chicken, or even as a party finger food.
Would you like me to give you a creamy version (with a cheese-filled mashed potato base) or a crispy one (with golden crust and gooey center)? I can tailor it to your favorite texture.
