Saucy Hungarian Red Potato Goulash (Paprikás Krumpli)

Ingredients:

  • 1 kg potatoes, peeled and cut into chunks
  • 250 g smoked sausage, sliced (optional but traditional)
  • 2 onions, chopped
  • 2 tbsp oil or lard
  • 2 tbsp Hungarian sweet paprika
  • 2 cloves garlic, minced
  • 1 tomato, chopped (or 2 tbsp tomato paste)
  • 1 green pepper, chopped (optional)
  • 700–900 ml water or broth
  • Salt and black pepper to taste
  • 1 tsp caraway seeds (optional)

Instructions:

  1. Heat oil or lard in a large pot and sauté onions until soft.
  2. Remove from heat and stir in paprika quickly.
  3. Add garlic, tomato, and pepper, and mix well.
  4. Add sliced sausage and cook for a few minutes.
  5. Add potatoes and stir to coat in the paprika mixture.
  6. Pour in water or broth until just covering the potatoes.
  7. Add salt, pepper, and caraway seeds.
  8. Simmer for 25–35 minutes until potatoes are soft and sauce thickens.
  9. Stir occasionally and adjust seasoning if needed.
