Ingredients
Cake
- 2 cups all-purpose flour
- 1Β½ cups sugar
- 2 tsp baking powder
- Β½ tsp salt
- 3 large eggs
- Β½ cup vegetable oil
- 1 cup crushed pineapple with juice
- Β½ cup coconut milk (or regular milk)
- 1 tsp vanilla extract
- 1 cup shredded coconut
Topping / Frosting
- 1 cup heavy whipping cream (cold)
- Β½ cup cream cheese, softened
- Β½ cup powdered sugar
- Β½ cup crushed pineapple, well drained
- Β½ cup shredded coconut (toasted optional)
Instructions
- Preheat oven to 180Β°C / 350Β°F. Grease a 9Γ13 baking dish.
- Make the batter
In a bowl, whisk eggs and sugar until light. Add oil, pineapple with juice, coconut milk, and vanilla.
Mix in flour, baking powder, salt, and shredded coconut until just combined. - Bake
Pour into the pan and bake 35β40 minutes, until a toothpick comes out clean. Let cool completely. - Prepare the frosting
Beat cream cheese and powdered sugar until smooth.
Add whipping cream and beat until fluffy. Fold in drained pineapple. - Assemble
Spread frosting over cooled cake. Sprinkle with shredded coconut. - Chill & serve
Refrigerate at least 1 hour before slicing for best texture.
