- 2 large eggs

- 1 cup (240 ml) milk
- ½ cup (120 ml) sparkling water
- 1 tablespoon oil (plus more for frying)
Directions
- In a bowl, whisk flour, eggs, sugar, and salt.
- Gradually add milk and sparkling water, mixing until smooth and thin.
- Stir in oil. Let batter rest 15–20 minutes.
- Heat a lightly oiled nonstick pan over medium heat.
- Pour about ¼ cup batter into the pan, swirling to coat thinly.
- Cook 1–2 minutes until edges lift, flip and cook briefly on the other side.
- Repeat with remaining batter.
