Ingredients

  • 1 cup (125 g) all-purpose flour
  • 2 large eggs
  • 1 tablespoon sugar (optional, for sweet filling)
  • Pinch of salt
  • 1 cup (240 ml) milk
  • ½ cup (120 ml) sparkling water
  • 1 tablespoon oil (plus more for frying)

Directions

  1. In a bowl, whisk flour, eggs, sugar, and salt.
  2. Gradually add milk and sparkling water, mixing until smooth and thin.
  3. Stir in oil. Let batter rest 15–20 minutes.
  4. Heat a lightly oiled nonstick pan over medium heat.
  5. Pour about ¼ cup batter into the pan, swirling to coat thinly.
  6. Cook 1–2 minutes until edges lift, flip and cook briefly on the other side.
  7. Repeat with remaining batter.
