Palacsinta (Hungarian Crepes)

Ingredients (makes 8–10):

  • 250 g (2 cups) all-purpose flour
  • 2 eggs
  • 500 ml (2 cups) milk
  • 1 tbsp sugar (optional)
  • Pinch of salt
  • 2 tbsp oil or melted butter (plus extra for frying)

Instructions:

  1. Mix flour, eggs, milk, sugar, and salt until smooth.
  2. Add oil or melted butter and whisk well. Let rest 15–20 minutes.
  3. Heat a lightly oiled pan over medium heat.
  4. Pour a small amount of batter and swirl to form a thin layer.
  5. Cook 1–2 minutes per side until lightly golden.
  6. Repeat with remaining batter.
  7. Fill with jam, chocolate, cottage cheese, or any filling you like.
