Instructions:

  1. Wash the tripe well and cut into strips if needed.
  2. Heat oil or lard and sauté onions until golden.
  3. Add garlic, remove from heat, then stir in sweet and hot paprika.
  4. Add tripe and mix well.
  5. Add tomato, pepper, chili, tomato paste, bay leaf, salt, and pepper.
  6. Pour in water or broth to cover.
  7. Simmer on low heat for 2–3 hours until tripe becomes tender and flavorful.
  8. Stir occasionally and add more liquid if necessary.
  9. Serve hot with fresh bread or boiled potatoes.
