1. Make the crust
- Crush the biscuits into fine crumbs.
- Mix with melted butter.
- Press firmly into a small tray or glass dish.
- Chill in the fridge while preparing the cream.
2. Make the pineapple cream
- Beat the cream cheese until smooth.
- Add condensed milk and vanilla β mix.
- Add the heavy cream and whip until thick and fluffy.
- Fold in crushed pineapple + 3 tbsp pineapple juice.
3. Assemble
- Spread the cream mixture over the chilled crust.
- Smooth the top.
- Sprinkle coconut or extra pineapple if desired.
4. Chill
Refrigerate for at least 3 hours (overnight gives the BEST texture).
